Steak Chimichurri

Steak and zesty chimichurri sauce for dinner this evening, served with perfectly cooked new potatoes and crunchy salad.

Ingredients

New potatoes - 800g
lemon x 1
parsley - 1 handful
rump steak x 2 250g
garlic x 4 cloves
salad onions x 4
big handful of corriander
small red chilli x 1 chopped fine
red wine vinegar - 2 teaspoons
olive oil


romain lettuice x 1
ripe medium tomatoes x 4
green peas x 150g
olive oil
basamic vinegar
parmesan cheese

Method

First get the potatoes boiling in a pan - they will take about 15 mins Now make the chimichurri paste - get the following in to a mini food processor - peeled garlics, spring onions, corriander, chilli vinegar and a drop of water, blitz the lot up to a paste and season with a bit of salt and pepper

Next up get the steaks going - rub them over with a little olive oil, salt and pepper, cook in a hot frying pan, for 1 minute on each side then leave in the pan for another minute off the heat - note this is for a medium rare steak.

Now get everything together on a large platter, spin and chop up the lettuice leaves, roughtly chop the tomatoes , pour on your cooked potatoes and slice the steak and put these on the platter
